Wash and dry all produce. Adjust rack to middle position and preheat oven to 400 degrees. Core and seed the @yellow bell peppers{2%unit}, then thinly slice. Pick cilantro leaves from the stems of @cilantro{¼%oz}; finely chop the leaves and stems separately. Peel and halve @red onion{2%unit}. Thinly slice one half; finely dice the other. Drain and rinse @black beans{26.8%oz}.

Line a #baking sheet{} with foil, then toss the sliced bell pepper and thinly sliced onion with a drizzle of @olive oil{4%tsp} and a pinch of @salt{} and @pepper{}. Roast in the oven until soft and browned, ~{15%minutes}.

Heat a large drizzle of @olive oil{4%tsp} in a #pot{} over medium heat. Add the black beans, then stir in @Southwest Spice Blend{2%tbsp}, the chopped cilantro stems, ½ cup water, and @hot sauce{2%tsp} to taste. Season with salt and pepper, then cover and cook until slightly thickened and creamy, ~{10%minutes}.

While the beans cook, core and dice @roma tomato{2%unit}. Zest @lime{2%unit} until you have ½ tsp zest, then cut the limes into halves. Stir together the tomato, black beans (optional), cilantro leaves, lime zest, and a squeeze of the lime juice in a #small bowl{}. Season with salt and pepper.

Wrap the @flour tortillas{12%unit} in foil and place in the oven to warm, ~{5%minutes}. For a faster option, wrap them in a damp paper towel and microwave on high until warm, ~{30%seconds}. Remove the beans from the heat and mash with a potato masher or fork until mostly smooth.

Fill the tortillas liberally with the mashed beans, roasted bell pepper, sliced onion, salsa, and a dollop of @sour cream{8%tbsp}. Set everything else out on plates so everyone can assemble their own fajita feast. Serve any remaining lime juice and seasonings on the side.
